Popcorn Garlic Shrimp

1 lb small shrimp, shelled

¼ cup olive oil

3 garlic cloves, finely chopped

½ tsp red pepper flakes

½ tsp paprika

1 tbsp fresh lemon juice

salt & pepper

1 tbsp fresh parsley, chopped

Pat shrimp dry with paper towels.

Heat oil in large non-stick skillet over medium heat.

Add garlic & red pepper flakes; sauté one minute.

Increase heat to high.

Add shrimp and paprika

Cook, stirring briskly, for 2 minutes.

Add lemon juice; cook 1 minute more, just until shrimp are pink and cooked through.

(Do not overcook shrimp; it toughens them.)

Transfer to a platter with a slotted spoon.

Add salt & pepper to taste.

Sprinkle with parsley, serve immediately.

4 servings, each with 1.5 gm. carbohydrates
