Cilantro Coleslaw with Coriander Lime Dressing

Saw this coleslaw recipe in a magazine and recreated it from memory. Originally, it was served with a mole dish of some kind. Yum!

Not sure of quantities, so make this to taste. I just had some for lunch and it was delish. The toasted coriander seeds give it a nutty taste.

SALAD:

Grated Red Cabbage

Grated Green Cabbage

Chopped Cilantro

Toasted Coriander Seeds

DRESSING:

Fresh lime juice

Plain Yogurt

Salt

Pepper

INSTRUCTIONS:

Toast the coriander seeds in a frying pan on medium heat until they brown and begin to pot. Don’t burn them!

Mix them with the cabbage and cilantro
