Pumpkin Soup

2 cups pumpkin puree (not pumpkin pie filling) (1 can)

4 cups chicken broth

½ onion, minced

1 cup mushrooms, chopped

½ cup cream and ½ cup water

1 clove garlic, minced

1 Tbsp. Italian Seasoning

½ lb spicy Italian Sausage

Brown Sausage, drain, then add onion, garlic, mushrooms, herbs.

Stir in pumpkin. Stir in broth. Simmer 20-30 minutes. Stir in cream/water mixture and simmer another 10 – 15 minutes. Season to taste with salt/pepper.

Awesome….I LOVE this stuff. Don’t be afraid to try it, just because it’s pumpkin.
