1 medium cauliflower – broken into florets
¼ cup mayonnaise
2 T fresh lemon juice
1 pkt stevia powder
½ tsp mustard
3 green onions, chopped
1 jalapeno pepper – very finely chopped
½ tsp salt
½ tsp pepper
Cook cauliflower in a large pot of boiling salted water 10 minutes, until tender.
Drain and rinse under cold water; pat dry.
In a large mixing bowl, mix mayonnaise, lemon juice, Stevia and mustard.
Add cauliflower, green onion and jalapeno pepper
Mix well until vegetables are evenly coated with dressing.
Add salt and pepper to taste.
Chill 30 minutes for flavors to blend.
Notes: 2.5 gm carbohydrates
May substitute 2 T chopped green bell pepper for jalapeno pepper.
