Cranberry Ginger Pork Roast

Only 5 ingredients produce a flavorful, complex dish: tart, sweet, smoky and spicy.

Chilpotles in adobo are smoked jalapeno peppers in a tomato-based sauce. They can be found in the ethnic food section of most supermarkets.

4 pound bone-in pork loin roast (I used Country Style Ribs for BBQ)

1 cup fresh or frozen cranberries, coarsely chopped

¼ Cup Atkins Sugar Free Pancake Syrup

1 canned Chilpotle en adobo, chopped (didn’t have any – used crushed red pepper flakes and a couple drops of liquid smoke)

2 tsp grated fresh ginger

½ tsp salt

¼ tsp freshly ground pepper

In a small bowl, mix cranberries, syrup, chipotle, ginger.

Rub pork loin with pepper and salt to taste. Brown sides in frying pan.

Place roast in slow cooker, rub with mixture. Cover and cook on low 8 – 10 hours.

Servings: 6

Prep time: 5 minutes

Bake/Cook time: 8 hours

Carbohydrates: 2 gm.

Net Carbs: 1.5 gm.

Fiber: 1 gm
