Grilled Salmon with Jalapeno Butter

Prep time: 10 min Cook Time: 10 min, plus chilling time

1 inch piece of fresh ginger, finely chopped

2 large cloves garlic, finely chopped

2 jalapeno peppers, seeded (wear rubber gloves) and chopped fine

¼ cup fresh cilantro leaves, loosely packed

½ cup unsalted butter, softened

4 salmon filets, about 6 ounces each

Prepare grill or broiler. Combine first 3 ingredients in a blender or food processor. Process until smooth.

Add cilantro and butter. Process until combined.

Using wax paper or plastic wrap, shape mixture into the shape of a log. Seal tightly and chill until firm.

Season Salmon with salt and pepper to taste. Grill or broil 4 – 5 minutes per side until just opaque throughout. Serve fish with a slice of jalapeno butter.
