Tuna or Salmon Muffins

Recipe from Linda’s Low Carb Menus and Recipes

2 6-oz cans tuna or salmon, drained well and flaked

2 eggs

¼ cup celery, chopped fine (1 oz)

2 Tbsp. Onion, chopped fine (1/2 oz)

¼ cup green bell pepper, minced (1 oz)

2 oz cheddar cheese, shredded

salt and pepper to taste

pinch of Old Bay Seasoning

Mix all ingredients together and spoon into 6 well-greased muffin cups. Bake at 350 degrees for 30 minutes, until puffed , set and lightly browned.

Makes 6 servings

Can be frozen

Per serving: 109 calories, 8 gm fat, 12 gm protein, 1 gm carbohydrate, trace dietary fiber, 1 g net carb

Serve with Tartar Sauce or Chilpotle Mayo.
