2 lbs. Ground beef
1 ½ oz. Onion, chopped, about ½ a small onion
10 oz. Pkg. Frozen chopped spinach, thawed and well drained
8 oz. Cream cheese, softened and cubed
½ cup parmesan cheese, 2 oz.
½ cup heavy cream
1 ½ tsp. Salt
½ tsp pepper
Spray a 2-quart casserole with non-stick spray. Brown hamburger and onion in a large pot or Dutch oven; drain fat.
Stir in spinach; mix until well combined; add salt and pepper.
Add cubed cream cheese and stir until blended, mashing it into the meat to blend well.
Stir in parmesan and cream; mix well.
Pour into casserole dish. Bake, uncovered, at 350 deg. for 30 – 35 minutes, until bubbly and browned.
Makes 6 – 8 servings.
Per 1/6th of recipe: 514 calories; 40 gm fat; 33 gm protein; 4 gm carbohydrate; 2 gm dietary fiber; 2 gm net carbs.
Per 1/8th of recipe: 386 calories; 30 gm fat; 25 gm protein; 3 gm carbohydrate; 1 gm dietary fiber; 2 gm net carbs.
