Lemon Pepper Chicken Salad

Servings: 2 Preparation Time: :10 min.

13 oz can of chicken breast chunks, canned, drained

2 tbsp green onions, sliced

2 tbsp celery, diced

½ tsp lemon pepper

3 tbsp mayonnaise

½ cucumber, sliced

1 cup lettuce leaves

Shred chicken and mix in green onions, celery, lemon pepper and mayonnaise.

Make a bed of lettuce on plate, with cucumbers around the edge.

Fill center with chicken mixture.

Notes: 4.2 gm net carbohydrates
